Banana Bread Recipe… Without Eggs!

I have this thing where I buy fruit with all positive intents of eating it and then the days go by, and the fruit goes bad…. which I hate. Long story short, I had bananas that were going bad and could not bear the thought of throwing them out. So, I made banana bread. Of course, baking with Caitlin wouldn’t be complete without a snafu and the snafu of the day was, drum roll please, I didn’t have eggs.

Lucky for me I found an old recipe for banana bread without eggs. Now, one may think, how does one make a sweet bread without any liquids. Great question… and honestly, I was fearful myself when I started because the batter was DRY until I added the bananas. The moisture from the bananas added just enough moisture to give the batter a batter look vs a powder look. So, fear not, fearless baker who also doesn’t have eggs. You too can make banana bread from old bananas you bought in a healthy state of mind without eggs.

Ingredients:

  • 1/2 cu shortening or butter

  • 1 cu white sugar

  • 1 and 1/2 cu flour

  • 1 tsp baking soda

  • 1 tsp salt

  • 3 very ripe mashed bananas

  • 1 to 2 tsp vanilla

Recipe:

  1. Preheat oven to 325. Lightly grease an 8x4 inch loaf pan

  2. In a large bowl, cream the shortening and sugar and add the vanilla. Sift in the flour, baking soda and salt.

  3. Mash the bannans - blend in to the powdered mixture

  4. Pour batter in to prepared pan

  5. Bake in preheated oven for 60 minutes or until a toothpick comes out clean

The taste was fantastic, but funny enough a little wet. I probably should have left it in the oven a bit longer, but it had already baked for an hour, and it passed the full baked test (no batter came out on the toothpick). All this to say if I were to make this again, I would definitely leave it in there about 10 minutes longer.
