Fluffy Silver Dollar Pancakes
I woke up the other day craving pancakes. Well, actually, I was craving waffles, but unfortunately no longer have a waffle maker so I settled on pancakes. I go back and forth between wanting a large thin griddle style cake vs a silver dollar fluffy pancake. I landed on the thick fluffy kind and man did they hit the spot.
Ingredients
1 and 1/2 cu all-purpose flour
3 and 1/2 tsp baking powder
1 tbsp white sugar
1/4 tsp salt
1 and 1/4 cu milk
3 tbsp butter, melted
1 egg
Recipe
Sift flour, baking powder, sugar and salt together in a large bowl. Add milk, melted butter and egg. Mix until smooth. If you are hand mixing, this could take a few minutes as the batter is thick!
Lightly grease a pan over medium high heat. Scoop batter on to skillet, about 1/4 cu for each pancake. Cook about 2-3 min per side. You'll be able to tell when to flip because the sides start to stiffen. You can also take a little peek at the bottom and look for a golden-brown color. Flip and cook until browned on the other side. Repeat with remaining batter.
This is a super simple, easy to make recipe. Keep in mind, they are the thicker variety so if you want a thin pancake, these are not for you. However, if you are looking for something hearty this will be your go to recipe.
I had mine with syrup and loads of butter, but you could easily add a fruit topping or powdered sugar if you wanted to mix things up.
