Sourdough Part 2. Why do I Make Things More Challenging for Myself?!

Yesterday, I thought to myself… I don’t need to feed my starter. I’ll have enough sourdough to last me through the weekend and then I’ll make some again next weekend. HAH. Flash forward to me in the grocery store today thinking oh having some bread and nice cheese would be a yummy treat, do I have enough bread for a cheese snack plus toast in the morning. No? OK I guess we need to make some more bread.

Remember when I said last time it took me a day and a half to finish? Yeah, why did I think this time would be an exception. So here I am blasting the heat in my apartment trying to keep it as warm as possible so the starter will grow quickly. I think I fed it around 2, it’s now around 7 and it’s risen about a 1/4 of where it needs to be. Fingers crossed and the final 3/4 of the rise will happen far faster otherwise I’ll have to abandon this round and start from the beginning tomorrow.
