Spring Pea Pasta
I just made a fabulous, quick and easy pasta dish and I’m going to get right into the details.
Ingredients
1/2 lb of pasta
2 tbsp olive oil
2 tbsp butter
1 can peas
3 green onions, just the white bits
2 cloves garlic
salt and pepper
1/2 cup white wine or water
1/2 cup broth
1/2 cup cream
1/2 cup pasta water
1 cup grated parm, plus more for serving
basil for serving
Recipe:
Boil the water to make your pasta of choice. I did penne because that’s all I had but you could easily use any pasta variety. Follow the box instructions, or about 10 min until al dente. Reserve half a cup of pasta water for sauce at end.
Start making the sauce -
Add the oil and butter to a large pan then add the garlic and green onions, sauté for about 5 minutes, until soft. Season with salt and pepper.
Add in broth and white wine (or water) - reduce, stir occasionally. Add in peas, cook until tender.
Once pasta is cooked, add to the sauce, stir in pasta water, cream and parmesan, stir to combine.
Serve with basil and a bit more parm.
Why I Like It:
The peas make it fresh and light, but there is a rich creaminess to the dish because of the cheese
Quick and easy to make - takes about 30 minutes
Versatile - could easily add a meat or shrimp to the dish to add some protein
It gets better the next day. The cream sauce thickens and coats to the pasta to create a scrumptious dish.
