Well That Was Delicious

I've been trying to incorporate more beans in to my diet after hearing in a podcast that people that eat more beans live a healthier, longer life. I was eating a ton of chickpeas until they decided to give me acid reflux, so I had to find the next best thing. Well let me tell you someone has been gate keeping cannellini beans from me because they are my new best friend. I add them to almost every meal. So filling, and such a good base.

I've been craving buffalo sauce so I was thinking of creating a dish with beans and the buffalo sauce. When I was at the grocery I grabbed some broccoli and spinach because those are always good bases and some chicken stock to steam them in. However when it came time to cook I realized I wasn't in the mood for a buffalo bean dish. What's a girl to do? Luckily lots of dishes can come from broccoli and beans.

So that lead my to my research. I found an interesting article with NYT Food, but it called for soaking the beans overnight and cooking them for 2 hours, sorry no one has time for that. So the search continued. I found this great recipe that listed roasting the beans and broccoli with a little bit of lemon and garlic and pepper then broiling some parm cheese on top. As part of the finale I poached an egg... let me tell you chefs kiss. It's been 2 hours since I ate and I am still stuffed. Beans for the win!

I think it was a decently low calorie meal, but so filling. Based on my rough counting it was about a 600 calorie meal. Honestly, I wish I ate a little less of it so I could sneak a chocolate or too, but I'm too stuffed to even think about it. Success on multiple fronts I guess!

Recipe:

  • 2 (ish) tablespoons of olive oil, 1 extra for pan

  • 3 cloves garlic, minced (I always use the pre minced garlic - about 3 tsp worth)

  • 2 stalks of broccoli - cut to florets

  • 1 can of cannelini beans

  • Red pepper flakes

  • 1 lemon

  • Salt and Pepper

  • 1/2 cu - 1 cu of parm

Preheat oven to 400*F; Drizzle baking sheet with oil

Combine olive oil, garlic and red pepper flakes in to a bowl. Toss broccoli in oil mixture to coat, add beans and toss. Add to baking sheet, lay out flat. Squeeze juice of one lemon on to mixture, cut lemon in to wedges, add to baking sheet. Season with salt and pepper and roast in oven for about 15-20 min.

Once broccoli is charred on top, remove from oven add parm to cover return to oven to broil for about 3 min until cheese is melted.

Remove from oven and serve. I made mine with a poached egg and side of bread. But you definitely don't need the egg. There is plenty of protein
